Evernote. Well, Evernote has releases their own scanning app, Scannable, to help make that goal of being 'paperless' as attainable as possible.
There are currently plenty of apps that scan papers and convert them to PDF files and transfer them to Evernote. However, this app goes beyond just that and helps you decide what to do with the scan (or what it thinks you should do with the scan) from the moment you hold up your phone.
